Raw and Romantic Blackout Chocolate Torte with Rose
A romantic, deeply dark, three-layer chocolate torte: a fudgy cacao-walnut brownie crust, a silky dark chocolate mousse made with rich cacao paste and a whisper of rose, and a glossy, mirror-dark ganache, crowned with rose petals, fresh raspberries, and cacao nibs. A heart-opening cake for Valentine's Day, anniversaries, or any day that calls for something truly special. Vegan, grain-free, and refined-sugar-free.
Yield: One 8-inch torte, 12–14 slices · Active: 45 min · Total: 6 hours, mostly setting (or overnight) · Year-round · Best eaten: midday or early afternoon
About cacao as a "heart opener": Cacao was considered sacred in ancient Mesoamerica, where it was shared in ceremonies and celebrations. Today we know cacao's theobromine and flavanols help relax blood vessels and support healthy blood flow, which makes it a heart opener both in spirit and in body.
Ingredients
Dark brownie crust
1½ cups walnuts
1 cup soft Medjool dates, pitted
⅓ cup raw cacao powder
1 tsp pure vanilla extract
Pinch of Baja Gold sea salt
Dark chocolate rose mousse
2 cups cashews, soaked at least 4 hours (or 1 hour in hot water), then drained
¾ cup full-fat coconut cream (with no guar gum)
½ cup maple syrup
⅓ cup raw cacao powder
3 oz cacao paste (100% cacao), melted (or ¼ cup more raw cacao powder plus 2 tbsp more cacao butter)
¼ cup cacao butter, melted
1 tsp pure vanilla extract
1–2 tsp food-grade rose water, to taste (start with 1)
¼ tsp Baja Gold sea salt
Optional: 1 tsp instant espresso powder, to deepen the chocolate
Glossy dark ganache
3 oz cacao paste or 100% cacao chocolate, finely chopped
⅓ cup full-fat coconut cream
2 tbsp maple syrup
1 tsp coconut oil
Pinch of Baja Gold sea salt
To decorate
Dried edible rose petals
Fresh raspberries (or pomegranate arils)
Cacao nibs
Flaky sea salt
Method
Make the crust. Line the bottom of an 8-inch springform pan with parchment. Process the walnuts to a coarse crumb, then add the dates, cacao, vanilla, and salt and process until it sticks together when pressed. Press it firmly and evenly into the pan and freeze 15 minutes.
Make the mousse. Make sure your ingredients are at room temperature. Blend the cashews, coconut cream, maple syrup, cacao powder, vanilla, rose water, salt, and espresso powder (if using) in a high-speed blender until completely silky. With the blender running on low, stream in the melted cacao paste and cacao butter. Taste, and add more rose water a few drops at a time if you like. It should whisper, not shout.
Set the mousse. Pour it over the crust, smooth the top, and tap the pan on the counter to release air bubbles. Freeze 3–4 hours, until firm.
Make the ganache. Warm the coconut cream until steaming (don't boil it), pour it over the chopped cacao paste and coconut oil, and let it sit 2 minutes. Whisk until smooth and glossy, then whisk in the maple syrup and salt. Warming the chocolate with coconut cream makes a true ganache that won't seize. Let it cool slightly, until thick but still pourable.
Pour the ganache over the frozen mousse, tilting the pan to spread it into a smooth, mirror-like layer. Chill 30 minutes, until set.
Decorate and serve. Release the springform. Scatter the top with rose petals, raspberries, cacao nibs, and a few flakes of salt. Slice with a sharp knife dipped in hot water and wiped dry between cuts, and let the slices sit 15–20 minutes before serving, so the mousse turns silky.
Make ahead: The torte (without its decorations) keeps up to 1 month in the freezer. Thaw it in the fridge for a few hours, then decorate the day you serve.
Storage: Refrigerated up to 5 days, or frozen up to 1 month.
A note on cacao and caffeine: This torte is rich in cacao, which contains theobromine and a little caffeine, so enjoy it earlier in the day, and serve small slices to kids. It's very rich, so thin slices go a long way.
A note on "raw": Every cashew sold has been heat-treated to remove the caustic oil in its shell, so "raw" here means no-bake.
Nourishment Notes
Raw cacao, cacao paste, and cacao butter — magnesium, iron, flavanols, and theobromine, which help relax blood vessels and support healthy blood flow, plus stearic acid, a saturated fat that research shows has a neutral effect on cholesterol.
Walnuts — ALA omega-3s and polyphenols.
Cashews — magnesium, copper, and zinc.
Medjool dates — potassium, magnesium, and fiber, with natural caramel sweetness.
Coconut cream — lauric acid, a medium-chain fat.
Raspberries — vitamin C, fiber, and ellagic acid.
Rose — polyphenols and a delicate floral fragrance, long associated with love and the heart.
As a circadian treat, this torte lands best at midday or in the early afternoon, when your body handles sweets most gracefully in daylight and the cacao's stimulants won't interfere with your sleep.
