Yield: One 6-inch cake, 8 slices · Active: 25 min · Total: 5 hours, mostly setting · Year-round · Best eaten: midday or early afternoon

Ingredients

Cacao-almond crust

  • 1½ cups almonds

  • 1 cup pitted Medjool dates

  • 2 tbsp raw cacao powder

  • 2 tbsp coconut oil, melted

  • Pinch of Baja Gold sea salt

Fudge layer

  • 1 cup smooth almond butter

  • ½ cup raw cacao powder

  • ½ cup melted coconut oil

  • ½ cup raw honey or maple syrup

  • 1 tsp pure vanilla extract

  • ½ tsp ground cardamom

  • Pinch of Baja Gold sea salt

To finish

  • 2 tbsp dried edible rose petals

  • ¼ cup pistachios, toasted and chopped

  • 2 tbsp cacao nibs

  • A pinch of fleur de sel

Method

  1. Make the crust. Process the almonds to a fine crumb, add the dates, cacao, coconut oil, and salt, and process until it holds together. Press firmly into a parchment-lined 6-inch springform pan and freeze 20 minutes.

  2. Make the fudge. Whisk or blend the almond butter, cacao, coconut oil, honey, vanilla, cardamom, and salt until glossy and smooth. If it starts to stiffen, set the bowl over warm water for a moment.

  3. Set. Spread the fudge over the crust and smooth the top. Freeze 2 hours or refrigerate 4 hours, until firm.

  4. Finish. Scatter with rose petals, pistachios, cacao nibs, and fleur de sel. Slice with a hot, dry knife, and serve slightly chilled. Thin slices go a long way.

Storage: Refrigerated up to 1 week, or frozen up to 1 month.
