Vanilla Bean and Salted Caramel Cashew Tart with Dark Chocolate Marble
A no-bake tart with a toasted pecan-date crust, a hidden layer of chewy salted date caramel, a silky, tangy vanilla bean "cheesecake" filling, and a glossy dark chocolate ganache marbled through the top. Make it as is, or change the crust's nuts and the swirl on top to create a whole collection of tarts from one recipe.
Yield: One 9-inch tart, 10–12 slices · Active: 45 min · Total: 7 hours, mostly chilling (overnight is best) · Year-round · Best eaten: midday or early afternoon
The Main Recipe
Ingredients
Toasted pecan-almond crust
1 cup pecans, toasted
1 cup almonds
1 cup soft Medjool dates, pitted
¼ cup unsweetened shredded coconut, toasted
½ tsp pure vanilla extract
½ tsp Ceylon cinnamon
¼ tsp Baja Gold sea salt
Optional: zest of ½ orange or ¼ tsp ground cardamom
Hidden salted date caramel layer
6 Medjool dates, pitted and soaked in warm water 10 minutes (save the water)
2 tbsp almond butter or cashew butter
½ tsp pure vanilla extract
¼ tsp Baja Gold sea salt
2–3 tbsp warm date-soaking water
Vanilla bean cheesecake filling
2 cups cashews, soaked 4–6 hours or overnight, then drained
1 cup thick full-fat coconut cream (with no guar gum)
⅓ cup maple syrup or raw honey
¼ cup fresh lemon juice, plus the zest of 1 lemon
2 tsp vanilla bean paste (or the seeds of 1 vanilla bean)
¼ tsp Baja Gold sea salt
3 tbsp melted coconut oil (or ¼ cup melted cacao butter, for a firmer set and cleaner slices)
Dark chocolate ganache marble
2 oz (about ⅓ cup) 100% cacao chocolate, finely chopped
3 tbsp full-fat coconut cream
1 tsp coconut oil
1–2 tbsp maple syrup
Pinch of Baja Gold sea salt
To finish: flaky sea salt
Method
Toast the nuts and coconut. Toast the pecans at 325°F for 8–10 minutes, and the coconut for 3–5 minutes, until fragrant and golden. Let them cool. (Toasting gives the crust a much deeper, buttery flavor; skip it to keep the tart fully raw.)
Make the crust. Pulse the pecans and almonds in a food processor until crumbly, then add the dates, coconut, vanilla, cinnamon, salt, and orange zest or cardamom (if using). Pulse until the mixture sticks together when pressed. Press it firmly into the bottom and up the sides of a 9-inch tart pan with a removable bottom, and chill while you make the rest.
Make the caramel. Blend the dates, almond butter, vanilla, and salt, adding warm soaking water a tablespoon at a time, until smooth and spreadable. Spread a thin, even layer over the bottom of the crust and chill 15 minutes.
Make the filling. Make sure your ingredients are at room temperature. Blend everything except the coconut oil in a high-speed blender until completely smooth and creamy. With the blender running on low, stream in the melted coconut oil (or cacao butter). Taste and adjust: more lemon for tang, more maple for sweetness, or a pinch more salt for depth.
Fill. Pour the filling over the caramel layer and smooth the top.
Make the ganache. Warm the coconut cream until steaming (don't boil it), pour it over the chopped chocolate with the coconut oil, and let it sit 2 minutes. Whisk until smooth and glossy, then whisk in the maple syrup and salt. Warming the chocolate with coconut cream makes a true ganache that won't seize. Let it cool slightly.
Marble. Spoon small dots or lines of ganache over the filling, then drag a skewer or knife through them in gentle swirls.
Chill at least 6 hours, or overnight, until firm. (In a hurry? Freeze 2–3 hours to set, then move it to the fridge.)
Serve. Release the tart from the pan, sprinkle with flaky salt, and slice with a hot, dry knife. Serve chilled; it's silkiest from the fridge, not the freezer.
For a more classic cheesecake flavor (with dairy): Replace 1 cup of the cashews with 8 oz goat cream cheese or regular cream cheese, and use cacao butter for a firm set.
Storage: Refrigerated up to 5 days, or frozen up to 1 month (thaw in the fridge for a few hours before serving).
A note on "raw": Every cashew sold has been heat-treated to remove the caustic oil in its shell, and toasting the nuts means the tart isn't strictly raw, so "raw" here means no-bake. Raw honey stays raw in the filling; it shouldn't be given to babies under 12 months, so use maple syrup if little ones will be eating it.
Crust Variations
Keep the same formula, 2 cups nuts plus 1 cup dates, toasted coconut, vanilla, cinnamon, and salt, and change the nuts:
Almond: 2 cups almonds. Neutral, lightly sweet, and classic. Best with vanilla, chocolate, and citrus.
Pecan: 2 cups pecans. Rich, soft, and buttery. Best with caramel, maple, and chocolate.
Walnut: 2 cups walnuts. Earthier and deeper. Best with dark chocolate, cinnamon, and espresso.
Hazelnut: 2 cups hazelnuts, toasted and skinned. Very flavorful and dessert-like. Best with chocolate and coffee.
Pistachio-almond: 1 cup pistachios plus 1 cup almonds. A beautiful green color and an elegant flavor. Best with cardamom, orange, and dark chocolate.
Coconut-pecan: 1½ cups pecans plus ½ cup toasted coconut (in place of the ¼ cup). More tropical and slightly sweeter. Best with caramel and chocolate.
Swirl and Drizzle Variations
Use one in place of the ganache marble, or combine two:
Dark chocolate drizzle: Make the ganache, chill the tart until set, then drizzle the ganache over the top in thin lines. Cleaner and prettier than a full swirl.
Espresso chocolate swirl: Stir ½ tsp instant espresso powder into the ganache before swirling. Grown-up and intense (and caffeinated).
Orange chocolate swirl: Stir the zest of ½ orange into the ganache before swirling. Elegant and fresh.
Hazelnut butter ribbon: Warm 3 tbsp hazelnut butter with 1 tsp maple syrup until pourable, and swirl it through the top alongside the ganache.
Berry swirl: Simmer ⅓ cup berries with 1–2 tsp maple syrup and 1 tsp lemon juice for 3–4 minutes, then mash or blend into a thick purée. Cool, dot it over the filling, and swirl lightly. Bright and fruity.
Cardamom honey drizzle: Warm 2 tbsp raw honey with a pinch of cardamom and a tiny pinch of salt, and drizzle it over the chilled tart just before serving. Delicate and fragrant.
Toasted coconut: Scatter ¼ cup toasted unsweetened coconut over the chilled tart, on its own or over a chocolate drizzle, for texture and a warm coconut note.
Signature Combinations
The Classic (the main recipe): Toasted pecan-almond crust, hidden salted caramel layer, vanilla bean filling, and dark chocolate marble.
Chocolate Hazelnut and Vanilla Bean: Hazelnut crust, vanilla bean filling, a hazelnut butter ribbon, and dark chocolate ganache. Rich and nutty, like a sophisticated chocolate truffle.
Pistachio, Cardamom, and Dark Chocolate: Pistachio-almond crust, vanilla bean filling with ½ tsp ground cardamom blended in, and a dark chocolate marble. Delicate, floral, and Middle Eastern-inspired.
Orange Blossom and Dark Chocolate: Pecan crust with orange zest, vanilla bean filling with the zest of 1 orange and ¼ tsp orange blossom water blended in (it's strong, so start small), and an orange chocolate swirl. Bright, aromatic, and elegant.
Salted Caramel, Coconut, and Vanilla: Coconut-pecan crust, a double layer of salted caramel, vanilla bean filling, a dark chocolate swirl, and toasted coconut on top. Sweet, salty, creamy, and crunchy.
Bright Berry and Lemon: Almond crust, vanilla bean filling with extra lemon zest, and a berry swirl (skip the caramel layer). Fresh and fruity, perfect for summer.
Small Details That Make a Big Difference
Use enough salt and acid. A little extra lemon juice and salt transforms an otherwise flat cashew filling into one that tastes like real cheesecake.
Toast the nuts for a deeper, more buttery crust.
Use real vanilla bean. You'll see the little flecks and taste the difference.
Chill overnight rather than freezing solid. The tart has the silkiest texture served chilled; straight from the freezer, the flavors are muted.
Nourishment Notes
Cashews — magnesium, copper, and zinc, plus a creamy base that sets without dairy.
Pecans, almonds, walnuts, hazelnuts, and pistachios — vitamin E, magnesium, manganese, and monounsaturated fats; walnuts add ALA omega-3s, and pistachios bring B6 and lutein.
Medjool dates — potassium, magnesium, and fiber, with natural caramel sweetness.
Coconut cream and coconut oil — lauric acid, a medium-chain fat.
100% cacao chocolate — magnesium, iron, flavanols, and theobromine.
Lemon — vitamin C and d-limonene.
Vanilla bean — vanillin and a warm, natural sweetness.
Cardamom and cinnamon — traditionally used to support digestion, and cinnamon helps moderate blood sugar.
As a circadian treat, this tart lands best at midday or in the early afternoon, when your body handles sweets most gracefully in daylight.
