Pink Coconut Caramel Chocolate Bars
A pink coconut layer, date-almond caramel and a chocolate coating: a no-bake, Bounty-inspired candy bar.
Yield: 16 bars (8×8 pan) · Active: 30 min · Total: 2 hr (includes freezing) · Season: a pantry dessert for any time of year · Cuisine: modern no-bake · Best eaten: as an afternoon treat, straight from the freezer
Here’s the coconut candy bar, dressed up in pink. A soft, creamy coconut layer tinted with pink pitaya sits under a layer of date-almond caramel, all wrapped in dark chocolate. No refined sugar, no oven, and it keeps in the freezer for whenever someone needs a treat. Cut them small: they’re rich.
It’s part of my no-bake candy bar collection, alongside the Raw Matcha Coconut Bounty Bars, Raw Snickers Bars, Raw “Twix” Bars, Raw Caramel Tahini Slice Bars and Pistachio Caramel Slice.
Ingredients
Pink coconut layer
2 cups unsweetened desiccated coconut
1 cup thick coconut cream (the solid part from a chilled can)
4 tbsp coconut butter (coconut manna), softened
3 tbsp pure maple syrup
1 tsp pure vanilla extract
1–2 tsp pink pitaya powder
Pinch Baja Gold sea salt
Caramel layer
1 cup medjool dates (about 12), pitted, soaked 10 minutes in warm water and drained
⅓ cup raw almond butter
⅓ cup almond milk
1 tbsp coconut oil, melted
½ tsp pure vanilla extract
Pinch Baja Gold sea salt
Optional crunch: a handful of pumpkin seeds, toasted coconut or chopped peanuts
Chocolate coating
½ cup coconut oil, melted. For a snappier coating that holds up better at room temperature, use ¼ cup cacao butter + ¼ cup coconut oil.
¾ cup raw cacao powder
¼ cup pure maple syrup
Pinch Baja Gold sea salt
Swaps
Nut-free: use sunflower seed butter in the caramel and coconut milk instead of almond milk.
Matcha version: skip the pitaya and add 1 tsp ceremonial-grade matcha to the coconut layer. See my Matcha Coconut Bounty Bars.
Quick coating: melt 1 cup of 85%+ dark chocolate with 2 tbsp coconut oil.
Method
Prep the pan. Line an 8×8 pan with parchment, leaving an overhang on two sides for lifting.
Make the coconut layer. Process all the coconut-layer ingredients in a food processor until fully combined and evenly pink, with no streaks. It should hold together when pressed. If it’s too wet, add ¼ cup more desiccated coconut. Press it firmly and evenly into the pan.
Make the caramel. Blend or process all the caramel ingredients until smooth and thick. Spread it evenly over the coconut layer. If you’re adding crunch, scatter it on now and press it in gently with a spatula.
Freeze. Freeze 1 hour, until firm.
Make the chocolate coating. In a small saucepan over very low heat (under 110°F), or in a double boiler, whisk the coconut oil (and cacao butter, if using), cacao powder, maple syrup and salt until smooth and glossy. If the maple makes it seize, whisk in a teaspoon of warm coconut oil. Let it cool a few minutes so it’s fluid but not hot.
Coat. Lift the slab out and cut it into 16 bars. Then either dip each frozen bar in the chocolate using two forks and set it on a parchment-lined tray, or, for an easier version, pour the chocolate over the whole slab in the pan, spread it evenly and slice after it sets.
Set. Freeze 10–15 minutes, until the chocolate is hard. For dipped bars, you can add a second coat once the first has set.
Slicing tip: Use a sharp knife warmed under hot water and wiped dry between cuts.
Storage: Freeze up to 2 months, or refrigerate up to 1 week in an airtight container. Serve cold; a coconut oil coating softens quickly in a warm room.
Nourishment Notes
Coconut in three forms (desiccated, cream and butter) makes the creamy center. It brings fiber and rich saturated fat, mostly lauric acid, which makes a small bar feel satisfying.
Pink pitaya (dragon fruit) powder gets its color from betalains, the same family of pigments that makes beets red. It’s freeze-dried and never heated here, so the color stays bright. The amount is small, so think of it as color, not a superfood dose.
Medjool dates make the caramel without any refined sugar and bring fiber, potassium and magnesium along with their sweetness. Almond butter adds vitamin E, magnesium and healthy fats, so the caramel has some substance.
Raw cacao brings magnesium, iron and flavanols, plus theobromine for a gentle lift. It also has a little caffeine, which is one reason these are an afternoon bar.
Maple syrup adds trace manganese and zinc, but it’s still sugar, so these bars stay small.
For your cycle: in the luteal phase, the magnesium from cacao, dates and almonds, plus the fat from coconut, makes one of these a steadier answer to premenstrual chocolate cravings than a store-bought candy bar.
