DIY Cottage Cheese — Two Methods
Making cottage cheese at home is honestly one of the most rewarding traditional dairy projects. The technique is ancient, the ingredients are minimal, and the finished product is meaningfully more flavorful and nutrient-dense than any commercial cottage cheese.
Method 1 — Clabber-Method Cottage Cheese (Traditional)
This is the traditional method — no rennet required, just live cultures and time. The clabber develops naturally from the raw milk's live bacteria.
What you'll need
1 gallon fresh raw milk (grass-fed A2A2 preferred)
¼ cup clabbered starter (from a previous batch, or from live cultured buttermilk/kefir as a starter)
Fresh grass-fed raw cream (¼ to ½ cup, for finishing)
Sea salt
Large glass jar with a cracked lid or covered with cheesecloth
Large stainless steel pot
Cheesecloth-lined colander
Thermometer (optional but helpful)
Method
Culture the milk. Combine 1 gallon of raw milk with ¼ cup clabbered starter in a clean glass container. Let it sit at room temperature for 24 hours until it thickens. Make sure there's some airflow — keep the lid cracked, or cover with cheesecloth. This is the fermentation phase where the live cultures do their work.
Handle the cream on top. As the milk clabbers, cream rises to the top. You have two options:
Mix it in for a richer, creamier finished cottage cheese
Scoop it off — the cream that rises to the top is like fresh sour cream, and can be used as such, or churned into cultured butter. Save this cream for the finishing step at the end — it's honestly the most flavorful cream you'll find for finishing cottage cheese
Heat gently. Transfer the clabbered milk to a large stainless steel pot. Heat gently to no more than 110°F over 30-60 minutes, stirring slowly and gently every few minutes. Your goal is a clean separation between the whey (yellowish liquid) and the curds (white solid clumps). You don't need to go exactly to 110°F, but don't exceed it — too high and you'll denature the proteins and lose the delicate texture.
Break up any large curds. Toward the end of cooking, if there are any large chunks of curds, gently pop them apart with your fingers.
Rest. Turn off the heat, cover the pot, and let sit for 30 minutes. This allows the curds to fully separate from the whey.
Drain. Place the cottage cheese curds into a cheesecloth-lined colander over a large bowl (save the whey for other uses — it's exceptionally protein-rich and can be used in smoothies, baking, or as a starter for future ferments).
Two options at this point:
Hang the cheesecloth bag and let it drain until it stops dripping (about 1-2 hours). This gives higher yield and a slightly creamier texture
Rinse the curds in cool water first, then hang to drain. This gives more definition between curds and a slightly lower yield — more like traditional store-bought cottage cheese
Stir in fresh grass-fed raw cream (the essential finishing step). Once the curds have finished draining, transfer them to a clean glass bowl. Stir in ¼ to ½ cup fresh raw grass-fed cream (adjust to your preferred creaminess — start with less, add more to taste). If you scooped off the cream from the top of the clabbered milk in step 2, this is exactly where it goes back in.
Add a small pinch of sea salt (about ¼ teaspoon per pound of curds), taste, and adjust.
Storage. Transfer the finished cottage cheese to a clean glass container. Refrigerate. It will keep for about 2 weeks in the fridge.
Method 2 — Rennet-Based Cottage Cheese (with Kefir or Clabber Culture)
This method produces a slightly more defined curd structure and traditionally shorter culture time.
What you'll need
1.25 gallons raw milk + 6 tbsp clabbered starter + ¼ tsp liquid rennet (the classical Amrein-Boyes recipe)
OR 2 gallons raw milk + kefir as the culture + liquid rennet (my honest simpler version)
Fresh grass-fed raw cream (¼ to ½ cup, for finishing)
Sea salt
Large glass jar
Large stainless steel pot
Cheesecloth-lined colander

Method
Add culture to milk. Combine the raw milk with the clabbered starter (or kefir) in a large glass jar. Let it sit at room temperature for 12-18 hours until slightly thickened but not yet fully clabbered.
Add rennet. Dilute the ¼ tsp liquid rennet in ¼ cup cool water. Stir into the milk gently. Let sit undisturbed for 30-45 minutes until the milk sets into a soft gel.
Cut the curd. Using a long knife, cut the curd into ½-inch cubes throughout the pot. Let rest 5 minutes.
Heat gently. Transfer to a large pot. Heat gently to no more than 110°F over 30-45 minutes, stirring gently every few minutes. The curds will firm up and separate from the whey.
Rest. Turn off heat. Let sit covered for 20-30 minutes.
Drain. Line a colander with cheesecloth. Pour the curds and whey through. Save the whey. Follow the same rinsing options as Method 1.
Stir in fresh grass-fed raw cream (the essential finishing step). Transfer drained curds to a clean glass bowl. Stir in ¼ to ½ cup fresh raw grass-fed cream (adjust to preferred creaminess). Add a small pinch of sea salt. Taste and adjust.
Storage. Refrigerate up to 2 weeks in a sealed glass container.

Traditional French-style cottage cheese (fromage frais) — stir in even more cream (½ to ¾ cup) for a spoonable, dessert-like texture.
